Ohhh sweet tooth of mine….how I hate you sometimes. You get
me searching for delicious desserts far too often. And it’s not like it makes
it easy! No, no! It has to be a paleo friendly, gluten and dairy free dessert.

And something that isn’t going to take all afternoon in the kitchen to make.
I often curse in the general direction of my sweet tooth.
But then, there are rare moments when it brings me fabulous finds. Like
THIS
recipe I tried out by Our Paleo Life. Kendra was awesome enough to share
her recipe for everyone to enjoy.

And enjoy it I did!
Honestly, I don’t have many changes to the recipe, I
think it’s brilliant as is, but here are my notes on it:
think it’s brilliant as is, but here are my notes on it:
- I honestly misread the directions, and did not in fact heat
anything. Except the coconut oil (to liquefy). I just mixed the crust ingredients,
formed the crusts, and then reused the bowl for the wet/filling ingredients, and
filled the tart crusts. Ooooopps. - I didn’t have any berries around (though I think raspberries
would be DELICIOUS next time around) to garnish with. - I only had mine sit in the fridge for about 3 hours before
trying them, and they were perfect. - I had some leftover coconut milk in the fridge already, and
it was cold, not sure if that’s a factor or not, but worth mentioning all the
same. - I used two different containers to let the tarts set in. I
went out and got the large foil tin wrapper things, and I used two silicone
regular sized muffin liners. I wanted to see which worked better. And you know
what? They both worked fine, but…. - I noticed, using the foil, it was harder to build up a sturdier and even
crust. And if you used the standard sized silicone muffin tin liner
thing-a-ma-jigs, you’ll need to make a tad extra crust, or be willing to eat
the extra filling….guess which one I did!
Needless to say, you need to go and Pin her recipe…. Then print
it out, and put the ingredients on your weekend shopping list. This recipe is
that good. I promise.

Those look so yummy! I love chocolate too.
You must try these! Although, I'm a huge chocolate fan too, and now that I know how easy they are to do, especially not heating them like you're SUPPOSED to, it is so tempting to whip them up on a whim…
